Prepare quinoa according to package directions. Keep cooked quinoa in the refrigerator to easily add to salads and other dishes.

For each serving, wash and then steam approximately 2 cups of kale in a pan with 2 tablespoons of water until kale becomes a bright green and has reduced in size by about one half. Top with 1 tablespoon of dried cranberries and 1/4 cup of cooked quinoa. 

Chill before serving if desired. Excellent with light citrus vinaigrette.
