This is a great dish if you are hungry and want something healthy right away. You probably have the ingredients in your pantry!
This vegetarian chili is delicious as is. Meat eaters can add one can of drained diced chicken or cooked ground beef if desired.
1 large can tomato sauce or juice (approx. 26 ounces)
1 can diced tomatoes
1 can beans, drained
1 can corn, drained
1/4 teaspoon chili powder, chipotle powder or cayenne pepper (more or less to taste)
1/4 teaspoon cumin
1 tablespoon onion flakes
Mix all ingredients and warm in microwave, pot or crockpot until heated through. Heating on the stove is best if you want it right away. Crockpots are great when you want to keep it warm longer.
Top with reduced fat sour cream and cheese if desired. Serves 4. (Double or triple recipe for larger crowds.)
For variety, try different kinds of beans like kidney, pinto, or black beans.
Wonderful with cornbread and a green salad!
