Ginger Honey Cucumber Tomato Chutney
1 can diced tomatoes
1 small cucumber, peeled and diced
1 tablespoon minced onion
1 tablespoon honey
1/4 teaspoon grated fresh ginger
1 teaspoon white wine or apple cider vinegar
Salt to taste


Drain off some of the juice from the tomatoes and then heat all the ingredients except the honey in a saucepan over medium heat for 5 minutes.  Stir in honey and heat another 5 minutes.

Great over fish or chicken!
