Green Beans Amandine

Amandine simply means "garnished with almonds."  It is an easy, tasty way to dress up your favorite vegetables and a much lighter alternative to traditional green bean casserole.

Cook green beans in a small amount of water until they are crisp tender. While they are cooking, lightly toast sliced almonds in a little butter in a skillet.  (Watch carefully so they don't burn.)

Drain beans and place in serving dish. Add salt to taste. Top with almonds.


You can vary this basic recipe based on your preferences.  For the holidays, you might want to add some color with dried cranberries.  Another option would be to add some toasted onion flakes or your favorite herbs like thyme or rosemary.
