Grilled Lemon Kale & Quinoa Tilapia from www.YourLifeTodayMagazine.com

Ingredients (Per Person)
1 tilapia filet
1 cup kale, washed
1/2 cup cooked red quinoa
1 tablespoon lemon juice
Salt or salt substitute to taste

Directions
Cook quinoa according to package directions.  
Steam kale in pan with 1-2 tablespoons of water per cup until bright green and reduced in size by about half.  Grill tilapia on very lightly-buttered or oiled contact grill for approximately five minutes until light and flaky. 

Place fish on plate and top with kale and quinoa.  Drizzle with lemon juice and sprinkle with salt or salt substitute if desired.

Delicious served with fresh berries or 
tomato salad.
