To make bites as shown, bake 2" rounds of your favorite pastry dough at 350 ºF until crisp, about 5-7 minutes. Top with chopped kale and mozzarella cheese. Return to oven until cheese melts. Serve warm.
Add portobello mushroom slices and substitute fontina for the mozzarella.
