To make bites as shown, bake 2" rounds of your favorite pastry dough at 350 ºF until crisp, about 5-7 minutes.  Top with chopped kale and mozzarella cheese.  Return to oven until cheese melts.  Serve warm.

Suggested variations...

Add portobello mushroom slices and substitute fontina for the mozzarella.

Use Golden Flatbread rounds in place of pastry dough for a healthier gluten-free option.
