Pumpkin Pie Filling
Sugar Cookie Dough
Preheat oven to 350 degrees F.
Press one batch refrigerator cookie dough evenly onto a greased jelly roll pan.
Bake for 10 minutes. (The trickiest part of this recipe is making sure the center crust cooks without burning the edges, which is why we're partially baking it before adding the topping.)
Top with approximately 1 1/2 cups pumpkin pie filling. (Not plain pumpkin)
Bake until pumpkin turns from bright orange to deep orange-brown and the edges of the cookie crust are golden brown. (Approximately 10 more minutes)
