This recipe couldn't be easier! Simply put chopped kale and sweet corn kernals in the bottom of a baking dish (mix in toasted onion flakes if desired), top with salmon fillets, sprinkle with olive oil and a little salt, and bake at 400 degrees F until fully cooked, which should take approximately 25-45 minutes. You can use fresh or frozen fillets and vegetables. Ovens vary, but fresh should be done in around 20-25 minutes and frozen should be done after around 45-50 minutes.  (Check regularly to be sure you don't over or under cook the dish. We like that some of the kale turns out a little crispy this way.)

If you have any leftovers, you can turn them into a roasted corn, salmon and kale salad by flaking the salmon and mixing the corn kernals with the kale.  Absolutely addictive!
