While you're indulging in these tasty morsels,
you might just forget they're good for you!


Rosemary Parmesan Crisps

Ingredients


1 cup yellow lentils 
1 cup water
1 tablespoon oil
1/2 teaspoon salt
1 teaspoon dried rosemary
2 tablespoons Parmesan cheese

Directions

Preheat oven to 400 
°F.

Wash lentils and finely grind in food processor. (Soak lentils for a few hours ahead of time if a smoother consistency is desired.) Add water, oil, salt, rosemary and one tablespoon Parmesan cheese, and blend until mixed completely.  

Drop teaspoonfuls of mixture onto cookie sheet lined with parchment paper (or lightly greased.)  Flatten dough to form thin disks.

Bake 10-12 minutes or until golden brown.  Cool on rack and then coat with Parmesan cheese.

Delicious with marinara sauce!

Chipotle Cheddar Bites

Substitute 1/4 tsp. chipotle powder and 2 tbsp. cheddar for rosemary and Parmesan for another tasty flavor combination.

Egg-free, Vegetarian & Gluten-free (Make sure the cheese you choose doesn't have any hidden gluten. While Parmesan cheese itself is usually free from gluten, occasionally companies will add wheat or other products to prevent sticking.)  Simply use vegan Parmesan or cheddar if you would like these snacks to be vegan.
