Sesame Ginger Stir-Fry

Sesame Ginger Stir-Fry with Carrots & Kale from www.YourLifeTodayMagazine.com

Ingredients (per person)
2 cups kale
2 tablespoons water
1 egg, beaten
1/2 cup carrots, diced
1/2 cup jicama, diced (optional)
2-3 drops dark sesame oil
1/8 teaspoon grated ginger (or to taste)
Salt or salt substitute to taste

For each serving, wash and then steam approximately 2 cups of kale in a pan with 2 tablespoons of water until kale becomes a bright green and has reduced in size by about one half.
 Add ginger.

Beat eggs and add to kale,* stirring until eggs are fully cooked. Add carrots and jicama.  (If softer carrots and jicama are desired, add earlier in the cooking process.) Top with sesame oil and toss to distribute.

*Depending on the surface of your skillet, you may need to add a little oil before adding the eggs to prevent sticking.
