Magic Bean Soup
This recipe is so simple it feels like magic!  

Basic Magic Bean Soup Ingredients

1 pound Great Northern Beans
1 teaspoon salt
1 tablespoon oil
1/2 gallon water

Directions

1) Put beans in colander and rinse thoroughly.  (Remove any stones or other impurities.) Soak overnight, discard water and rinse again.
2) Add beans, salt, oil and water to crockpot.
3) Turn crockpot on high and about 8-10 hours later you have soup!  

Note: Stir soup occasionally and add water as needed based on how much water evaporates from your crockpot.  Pots with loose-fitting lids lose more water.  Adjust salt to taste.

Magic Bean Soup is delicious all year, but to dress it up with the tastes of the harvest, in the last hour of cooking, add kale and/or sweet corn kernels, diced tomatoes, and chopped bell peppers.  Diced ham or bacon also adds extra flavor.  Top it off with a handful of blue corn chips if desired.  Wonderful hot or chilled!


For a tasty dip, sandwich spread or burrito filling, keep cooking the beans another few hours until they soften enough to form a paste when stirred.  Add onion flakes and chipotle powder or cayenne pepper for an extra kick.  Top with lettuce & tomato for an out-of-this world sandwich that also happens to be low-fat, high protein and high fiber!
